- Aperitif:
Crispy coca, Cantabrian anchovy, green tomato jam and truffle veil.
- Starter:
Seasonal tomato, burrata heart, basil emulsion and fresh flowers.
- Cold starter:
Scallop tiradito, passion fruit tiger’s milk and citrus notes.
- Main course:
Glazed beef shank, reduced BBQ jus, baby carrots and aromatic chimichurri.
- Dessert:
Peppered candied strawberry, fine tartlet and flambéed Italian meringue.
